1. Mix softened butter, olive oil, lemon juice and zest, as well as spices. Rub this mixture onto the meat and let it sit for at least an hour at room temperature.

2. Place the meat in the oven to bake for 20 minutes at 200 degrees, and in the meantime mix together the milk, cream, and spices. Add the herbs as well, but reserve a little for garnish.

3. Remove the meat, pour the sauce over it, cover, and simmer for an hour and a half. Reduce the temperature to 180 degrees.

4. Periodically turn the meat over or baste it with sauce to prevent it from drying out on top. After the indicated time, check for doneness: if the juice is pink when pierced, continue cooking. If not, the meat is ready to be removed!
