
Pork stewed with plums
Description
The dish is prepared without unnecessary complications. This recipe has been slightly adapted for our region, as in Georgia they prefer a very rich and pronounced taste of spicy and aromatic spices. Not everyone may enjoy such strong flavors, so we'll use familiar seasonings: salt, pepper, and nutmeg. The result is a delicious dish that can be served with various side dishes or salads. The dish is ready to be served.

1. For cooking this dish, you can use any part of the pork carcass; in this case, we take the shoulder, wash it, and cut it into small pieces.

2. Peel the onions, wash them, and cut into large pieces. Peel the garlic cloves and finely chop with a knife.

3. Take sweet or sweet-tart plums, wash them, and remove the pits. Then cut each plum into 4 pieces.

4. Peel the tomatoes by making cross-shaped incisions on top, placing them in a bowl, pouring boiling water over them, and letting them sit for 2 minutes. Afterward, easily remove the skin and cut the tomatoes into large pieces.

5. Pour a little vegetable oil into a frying pan, sauté the onion, then add the pieces of pork. Fry until golden brown, season with salt and pepper, add nutmeg and garlic, cook for another couple of minutes, then turn off the heat.

6. Transfer the meat and onions to a deep pot, add the plums and tomatoes, sprinkle with sugar, and pour in 150 milliliters of water. Cover the pot and simmer for 30 minutes, then uncover and continue cooking for another 15–20 minutes. Serve the finished dish with potatoes or porridge.
