
Pork stewed with prunes

1. First, take a small piece of pork fat and cut it into pieces. You can use bacon instead, if desired. Place the fat into a dry frying pan and fry it. Once the fat has rendered, carefully remove it from the pan and set aside for now.

2. Wash and dry the pork. Cut into portion-sized pieces and place in a pan where there was lard. Sear over high heat until golden brown crust forms.

3. Season the meat with salt and pepper to taste and carefully remove it from the pan. Set it aside as well.

4. Peel and mince the garlic. Add it to the pan where the meat was fried.

5. Peel the onion and carrot and cut into large pieces. Add to the pan with the garlic and sauté for 3-5 minutes.

7. Now return the meat to the skillet and add the prunes. Pour in a little red wine. Season with salt and pepper to taste. Add rosemary, bay leaf, and other spices as desired.

8. If desired, return the fat to the skillet and add a little broth. Cover with a lid and simmer over low heat until done. You can also add peeled potatoes, cut into medium pieces, to the skillet; in this case, the pork stewed with prunes at home will not require a side dish.
