
Pork with wine
Description
This dish takes only about half an hour to prepare, yet results in incredibly flavorful pork perfect for any festive table. If desired, you can substitute the parsley in the sauce with chopped dill—it will also taste delicious. Be sure to use good-quality dry wine for this recipe.

Wash the meat, dry it, and season with salt and pepper. Heat both types of oil in a skillet and add the meat to fry.

Sear the meat for 2-3 minutes on each side over medium heat.

Remove the meat from the skillet and drain off almost all the fat. Sauté the chopped onion in the remaining fat. Add half of the wine and bring to a boil. Add the broth, return the meat to the skillet, cover, and simmer over low heat for about 15 minutes.

Remove the meat and pour in the remaining wine, increase the heat and reduce the sauce by one-third. Add the cream, mustard, and chopped parsley. Simmer the sauce and bring it to the desired consistency.
