Instructions

Step 1

Take the lean part of pork; pork loin works perfectly for this recipe. Wash it, dry it, and remove any membranes and fat. Rub the pork with a mixture of olive oil and balsamic vinegar.

Step 2

Using a small sharp knife, make deep cuts in the pork loin. There should be six of them (the same number as the garlic cloves). If you want the meat to be more piquant and aromatic, simply increase the amount of garlic. Peel and chop the garlic, then stuff it into the meat.

Step 3

To make the meat flavorful, you will need fresh rosemary, a mix of peppers, thyme, and salt. Mix all these ingredients together in a container.

Step 4

Rub the meat with the resulting herb and spice mixture. Place a few fresh rosemary sprigs on top. Carefully wrap the pork with bacon slices around the entire perimeter. Place the pork loin onto a sheet of foil and tightly seal the foil edges. Bake the meat at 200 degrees Celsius (392 degrees Fahrenheit) for 50 minutes.
