
Pork with carrots and cucumbers on potato pancakes
Description
Drainiki are made from grated potatoes. Adding onion and spices is acceptable, and nothing else! Anything more and it's already potato pancakes. If you serve the drainiki with stewed pork and vegetables, it will be very tasty! This dish can be served with sour cream.

Cut the pork into cubes and fry in clarified butter until a golden crust forms.

Add the onion and fry for a couple of minutes. Add the carrots and diced pickled cucumbers, and fry everything together for another couple of minutes.

Pour in half a cup of boiling water, add salt and pepper to taste, and add spices. Simmer the meat over low heat for about half an hour.

Grate all the potatoes on a coarse grater, except for one medium potato. Grate this one on a fine grater. Add grated onion, dried paprika, and season with salt to taste. Mix well and fry the pancakes on a preheated oiled skillet, preferably cast iron.

Serve the pork with potato pancakes, three pancakes per serving. Arrange the pancakes, layering them with the meat and vegetables.
