
Pork with onions and tomatoes
Description
The dish is prepared without unnecessary complications. I particularly like this simple pork recipe with onions and tomatoes for its vegetable component: first, the vegetables slightly lighten what would otherwise be a heavy dish; second, they add juiciness to the meat; and third, they can even be served separately as a side dish—perfectly complementing the same baked pork. Shall we begin? 1. First, if necessary, defrost the meat and cut it into small pieces (the smaller the pieces, the faster they will cook). 2. Wash the tomatoes and slice them thinly into rounds. Chop the onion coarsely, as preferred. 3. Pour vegetable oil onto a baking tray and spread it evenly across the surface using a paper towel or a special brush. 4. Place the meat pieces onto the tray, season with salt and pepper. Spread the chopped onion over the meat, then arrange the tomato slices on top. 5. Spread mayonnaise over the tomatoes, then grate your cheese directly over the entire dish using a coarse grater. 6. Place the tray into the oven and bake for 20 minutes. Then cover the tray with foil and continue baking for another 20–30 minutes. That's it! Personally, I love the tender flavor of the vegetables and the juicy meat in this pork recipe with onions and tomatoes. That's why I don't add any extra spices, but of course, you can season it to your taste at any stage of cooking. Serve the dish hot and enjoy!
