
Pork with lemon and potatoes
Description
The recipe won't take much time. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the potatoes and season with salt and pepper. Cook, stirring occasionally, until golden brown, 8 to 10 minutes. Add 1/2 cup of water, cover with a lid, and simmer until the potatoes are tender and the liquid has evaporated, about 5 minutes. Add the onion and cook for 1 minute. Transfer the mixture to a bowl and keep warm. Using a sharp knife, slice the pork tenderloin crosswise into 12 equal pieces. Heat 1 tablespoon of oil in the skillet over medium heat. Cook the pork until browned, 1–2 minutes per side, adding lemon slices during the last 2 minutes of cooking. Serve the pork with lemon slices and potatoes, garnished with cilantro leaves. Serve hot.
