
Pork with chili, beans, and tomatoes
Description
Preheat the oven to 150 degrees. Place chili and garlic on a baking sheet. Bake until soft, about 5 minutes. Let cool slightly. Cut the chili into pieces, remove stems and seeds. Add to boiling water, remove from heat, and transfer to a small bowl. Let stand for 30 minutes. Drain the water, reserving 1/2 cup of the liquid. Mix chili, tomatoes, reserved liquid, and warm water. Peel the garlic. Rub garlic, spices, herbs, 2 teaspoons salt, and vinegar into a paste. Heat oil in a pot over medium heat. Season pork with salt and pepper. Cook pork until browned, about 4 minutes per side. Transfer to a plate. Add onion to the pot and sauté for 5 minutes. Add the paste and cook for 2 minutes. Return pork to the pot, add beans, chili mixture, salt and pepper to taste. Bring to a boil. Cover with a lid and bake in the oven until tender, about 3 hours. Serve with mamaliga, flatbread, sour cream, and jalapeño peppers.
