
Pork with garlic and fennel
Description

1. Press the garlic. Toast the fennel seeds in a small skillet over medium heat, stirring, until fragrant and slightly darker in color, 4 to 5 minutes.

2. Place the fennel seeds on a plate and let cool. Add salt, peppercorns, and red pepper. Grind in a spice grinder, but not until it becomes a powder. If you don't have a spice grinder, you can place all the spices in a resealable plastic bag and roll with a rolling pin until crushed.

3. Place the pork in a baking dish. Rub garlic all over the surface and evenly coat with the spice mixture. Loosely cover the pork with parchment paper. Refrigerate overnight.

4. Preheat the oven to 230 degrees. Grease a baking sheet with olive oil. Place the pork in the center of the baking sheet. Pour 2 tablespoons of oil evenly over the pork. Roast the pork for 30 minutes. Reduce the oven temperature to 150 degrees. Continue baking the pork until tender, about 3 hours and 15 minutes longer. Transfer the pork to a cutting board and let it rest for 15–30 minutes. Then thinly slice the pork and serve.
