
Pork with eggplants
Description
Pork with eggplants is a very light dish. We won't need anything special to prepare it. Since this is an oriental dish, soy sauce is a must. Keep in mind that soy sauce is very salty, so be careful not to over-salt the dish. Pork with eggplants is best served with plain rice or egg noodles. When serving, be sure to chop some fresh green onions, and enjoy!

Take all the necessary ingredients. Cut the pork and eggplants into cubes or strips.

Next, we prepare the batter. Dissolve the starch in two tablespoons of water. Then add beaten egg whites, a teaspoon of soy sauce, and salt.

Dip the pork and eggplant into the batter. Mix well. It is important that each piece is evenly coated with the mixture.

Next, place a frying pan on the highest heat and pour in 1 cup of vegetable oil. Add the pork with eggplants and fry for about 2 minutes, stirring constantly. Then transfer the meat with eggplants onto a paper towel to drain excess fat.

Then pour out all the oil from the skillet, leaving only a small amount. Heat the skillet again (over medium heat) and add the onion sliced into rings, peanuts, and garlic. Stirring constantly, fry for about one to two minutes. Add a spoonful of soy sauce, then add the pork with eggplants. Cook until done (about 1-5 minutes) and remove from heat.
