Honestly, this Irish-style pork recipe is one of the best in traditional Irish cuisine, and if you like unusual flavor and aroma combinations, it’s exactly what you need. To make the dish truly authentic, you need to follow a few rules. First, you must use pork with the skin on, because only then will you get a crispy, golden-brown crust. Second, real Irish people eat this pork only with apple sauce, and although for many of us the combination of apples and meat may seem a little strange and unfamiliar, without the sauce this dish cannot be called truly Irish. And of course, another secret of this pork is the stuffing we will use to fill it—it’s incredibly fragrant and gives the meat a special character. Overall, there’s nothing complicated here, and you’ll prepare this dish with ease; believe me, it will be a real highlight of your table.     First, rinse the pork under cold water and pat dry. Then make crosswise cuts in the skin and rub with salt and pepper. Next, finely chop the fresh herbs.

    In a skillet, heat the butter and sauté the finely chopped onion in it for 5–6 minutes. Then add the herbs and breadcrumbs to the skillet, season with salt and pepper, and mix everything together.

    When the filling has cooled, turn the pork skin-side down and rub it with salt and pepper, then spread the fried onions with herbs and breadcrumbs. Roll the pork into a roulade and tie it with kitchen twine.

    Place the roll in an oven preheated to 190°C and bake for about 1.5 hours. As a rule, allow about half an hour of baking time per half kilo of meat, so adjust the time according to the weight of your roll.

    When the time is up, turn the roll skin-side down and increase the temperature to 230 degrees. Bake until the skin is golden and crispy. Then turn off the heat and leave the roll in the oven for another 15–20 minutes.

    This is the beautiful result we end up with, and now all that’s left is to make the apple sauce. Peel the apples, remove the cores, and dice them finely. Put the apples in a saucepan, add water and sugar, and stir. Simmer over low heat with the lid on until the apples are soft. When the sauce has cooled, serve it on the table together with the roll.
