1. First, let's prepare the pork. Clean the ribs and make cuts to create pockets, but not all the way through. This way, the rack will turn into a sort of accordion shape. As for the sausages, remove their casings and mix the meat with spices.

2. Pack the sausage meat into the pockets of the "accordion" slices. Season the entire base with salt and pepper. Squeeze some juice from the orange into a small bowl, and place the orange slices between the ribs as well. Wrap the whole thing with kitchen twine, pour the orange juice and wine over it, and place in a preheated oven.

3. Bake for one and a half hours, periodically basting with the juice released during baking. To prevent the meat from burning on top, you can cover it with foil.
