
Pork on the bone
Description
The dish is prepared without unnecessary complications. Use a regular frying pan: fry the meat, then prepare a sauce using the meat fat, cilantro, mustard, and lemon juice. This dish can be made for dinner or lunch. Serve it immediately after cooking with a side of boiled or fried potatoes, porridge, or fresh and roasted vegetables. The finished dish is ready to be served.

1. Wash the bone-in pork chops and sprinkle one side with 0.5 teaspoon of sugar. Heat a skillet with 2 tablespoons of olive oil and place the meat sugar-side down.

2. Fry the cutlets on both sides until golden brown and cooked through. Remove the pan from the heat, do not remove the cutlets, but leave them in the pan for another 10 minutes.

3. Meanwhile, prepare the sauce: place lemon zest, lemon juice, mustard, pepper, oregano, grated garlic clove, cumin, salt, and the remaining sugar into a bowl, and mix well.

4. Add olive oil and chopped fresh cilantro to the sauce and mix well.

5. Place a portion of the sauce onto a plate, then put the bone-in pork cutlets on top.

6. Drain the fat from the frying pan, which formed during meat frying, into the remaining sauce and whisk.
