
Fried pork with mashed potatoes

Wash the potatoes under running water and peel them. Cut them into pieces of any size. The smaller the pieces, the faster the potatoes will cook.

Place the potatoes in a small pot and cover with clean cold water. Add a teaspoon of salt and put on the stove. Bring the water to a boil, then reduce the heat. Cover with a lid and simmer the potatoes until tender, for ten to fifteen minutes.

Wash the meat and dry it with paper towels. Remove any veins and membranes. Cut the pork into 1-centimeter-thick pieces. Season them with salt and pepper.

Heat vegetable oil in a skillet and add the pieces of meat. Sear on both sides over medium heat (5 minutes each) until fully cooked.

When the potatoes are fully cooked, drain the liquid from the pot, pour in the milk, and add the butter. Use a potato masher to turn the potatoes into mashed potatoes.

Wash the parsley and finely chop the greens with a sharp knife. Place a piece of fried pork and a couple of spoons of mashed potatoes on a plate, then sprinkle with the chopped herbs. Serve the dish!
