
Pork alla Pizzaiola
Description
The recipe won't take much time. Juicy, tender pork under a spicy tomato sauce with peppers and capers, covered with a fragrant blanket of melted, stretchy cheese... Mmmmmmm. Serve hot.

Rinse the pork under icy water and dry thoroughly. Cut into portion-sized pieces 1.5 cm thick.

Heat oil in a skillet, add one garlic clove crushed with the side of a knife. Once the garlic is golden, discard it, then add the pork pieces to the skillet. Sear the meat on both sides until browned. Transfer the meat to a plate, cover with foil, and keep warm.

Thinly slice the onion and pepper, finely chop the garlic.

Place the vegetables in a frying pan and lightly brown, stirring occasionally.

Chop the tomatoes in their own juice and pour them into the pan with the vegetables. Sprinkle with sugar and black pepper, simmer for a couple of minutes. Season with salt and remove from heat.

Pour part of the vegetable sauce into a ceramic dish, place the pieces of pork on top. On the pork, place olives cut in half and capers.

Pour the remaining sauce over the meat, top with thin slices of mozzarella. Sprinkle a pinch of oregano on top.

Bake the pork in a preheated oven at 200 degrees for 5 minutes, until the cheese melts and the meat is heated through.

Serve the dish hot, garnished with fresh herbs. You can serve pasta on the side, or simply go with fresh bread. A glass of wine is highly recommended.
