
German-style pork knuckle
Description
The recipe won't take much time. We'll make together a traditional Bavarian dish called "Eisbein." Or rather, I'll tell you about it. Serve hot.

Peel and wash the carrots and onions. Wash the ginger and celery, then cut them into 4 parts.

Place the knuckle in a pot of water and bring to a boil.

Afterward, remove the foam and reduce the heat to a minimum. Add ginger, celery, bay leaf, carrot, onion, cumin, and pepper to the water. Simmer for about 2.5 hours.

Peel the second onion, chop it finely, and sauté in oil for 4 minutes.

Squeeze the cabbage dry from the brine. Add it to the pan and simmer together with the onion for 10 minutes.

Preheat the oven to 210 degrees. In a bowl, mix cumin with beer and honey.

Let the knuckle cool slightly. Pass the garlic through a garlic press. Make incisions in the knuckle.

Place a layer of cabbage with onion in the baking dish. Put the pork knuckle on top. Rub it with garlic and the honey mixture.
