
Pork loin with squash
Description
The dish is prepared without unnecessary complications. Preheat the oven to 220 degrees. In a large bowl, mix together 3 tablespoons of oil, sugar, chili powder, cinnamon, cumin, and 2 tablespoons of water. Add the squash and mix well. Set aside. Season the pork with salt and pepper. Heat a skillet. Add 1 tablespoon of oil, making sure it coats the entire skillet. Sear the pork on all sides until golden brown, about 10 minutes. Place the pork on a baking sheet, pour the oil from the skillet over the pork, spreading it evenly across the fillet. Arrange the squash around the pork. Brush the pork with the spice mixture. Bake for 40 to 45 minutes, periodically basting with the spice mixture and turning the squash every 15 minutes. Cover the pork with foil and let it rest for 10 minutes before slicing. Serve the dish warm.
