
Pork belly
Description
It works for both holidays and everyday meals. This roll is sure to impress your guests if you decide to make it for a feast and serve it as a hot or cold appetizer. It is also an ideal option if your family does not eat store-bought sausage and other processed meat products. The crispy crust will win everyone over, but the flavor of this roll itself will not leave you indifferent. You can add prunes with cinnamon as a filling. Serve the appetizer at the table.

Step 1

Prepare the pork belly and trim the piece evenly. Also trim the pork loin to match the size of the pork belly.

Make incisions on the inner side of the pork belly. Season this part of the pork belly with salt, pepper, and dried fennel flowers. Insert chopped herbs and garlic into the incisions. Place the pork loin inside the pork belly and roll it into a roulade, tying it with kitchen twine—first making loops every 4–5 cm, then tying along the length.

Place the roll seam-side down and pierce to the middle in several places. Transfer the roll to a baking sheet and bake for 1.5–2 hours in a preheated oven at 180°C.
