
Beef Stroganoff
Description
Beef steak is usually served with dumplings. They are made from a dough prepared with milk, eggs, and wheat flour. The dough is rolled into a sausage shape, cut into pieces, and boiled. Before serving, a slice of lemon is added to the dish, on which a spoonful of thick sour cream is placed. A spoonful of tart jam—cranberry or lingonberry—is then poured over the sour cream.

Rinse the beef fillet, dry it, and lightly pound. Cut the ham or bacon into long strips about one centimeter thick. Wrap the strips in the beef to form a roll. Rub the roll with salt, a mixture of peppers, and cinnamon. Sear it in a pan with vegetable oil until golden brown, then bake in the oven for 25 minutes at 180 degrees.

Peel the carrots and celery, then cut them into large pieces. Lightly sauté these vegetables in a saucepan with vegetable oil until tender.

Then add a glass of water, a pinch of salt, and vinegar to the saucepan. Cook the vegetables, stirring, until the water evaporates by half. Then blend the mixture with a blender until smooth. Add the cream, mix well, and strain through a sieve.

Cut the beef roll into pieces about two centimeters thick. Place the vegetable purée on the bottom of the dish, making sure it completely covers the base. Arrange the meat on one side of the dish, and fill the other side with dumplings.
