Prepare all the necessary ingredients. Boil the beet in its skin until cooked, peel, and grate finely.

Beat the sugar with vegetable oil using a mixer.

Add the yolks one at a time (reserve the whites in a clean, dry bowl for whipping), pour in the lemon juice, and mix well.

Then add the chopped beet and raisins, and mix thoroughly so that all ingredients are evenly distributed.

Mix the flour with baking soda, baking powder, and cinnamon, then add the mixture to the dough and stir.

The dough turned out bright and very beautiful.

Beat the egg whites with a pinch of salt until stiff peaks form. Add them to the batter and gently mix, taking care to preserve the fluffiness of the egg whites as much as possible.

Transfer the prepared dough into a rectangular or round loaf pan. You don't need to grease the pan since the dough already contains plenty of butter. The size of my pan is 35x10 cm. The loaf turned out not too high, so you can safely use a smaller pan, but take note: if the pan is too small, the dough will overflow. Bake the loaf at 180°C for about an hour.

Dust the finished cake with powdered sugar and decorate as desired.
