Beet pancakes stuffed with herring
Description
Perfect for tea or coffee. I suggest making unusual bright pink pancakes. We achieve this color using juice or puree from cooked beets. Raw beet juice or puree will result in a very pale color; only cooked beets provide such a rich hue! Serve these pancakes with herring, eggs, and green onions. It will be delicious, vibrant, and festive—a true holiday dish. Serve cooled or slightly warm.
