Marinated Beets for Winter

Description

A winter preserve made at home. Marinated beets for winter storage are a very original way to make your canned goods both attractive and delicious. In truth, I love beets and try to cook them as often as possible in as many different ways as I can. That’s when the idea for this preserve came to me. I add quite a lot of ginger to the jars because it gives the beets a distinctive sharp kick, but you don’t have to add it—experience tells me you can do without it just fine. I was very pleased with my culinary invention. I make it all the time and recommend you try it—I think you’ll like it ;) Store in a cool, dark place.

    Slice the ginger into thin slices.

    Wash the beet, peel it, and slice into thin slices, the same as the ginger.

    Pour 1 cup of water into a pot. Add ginger, salt, sugar, and vinegar to the pot. Bring to a boil. Stir and make sure the sugar dissolves completely.

    Add the beets and wait until they come to a boil, then cook for another 4 minutes. Remove from the heat, cover the pot with a lid, and let the beets cool to room temperature.

    Then transfer the beets into a sterilized jar.

    Then seal the jar tightly with the lid and refrigerate to infuse. The beets can be eaten the next day. After opening the jar, the beets will keep for 2 weeks.
