
Wedding kulich
Description
The pastry is simple and quick to prepare. It is one of the main ceremonial dishes that must be present at every wedding. Dissolve the yeast with sugar in warm milk and mix with egg yolks creamed with sugar. Add flour, egg whites beaten into a foam, butter, and salt. Knead the dough, shape it into a beautiful loaf, and place it into a baking pan. Brush the surface with egg yolk and bake in the oven at 180°C for 75 minutes. While still hot, brush the loaf with sugar syrup. The pastry is ready. Serve at the table.

Dissolve yeast with a teaspoon of sugar in warm milk. Separate egg whites from yolks.

Rub 4 yolks with sugar and mix with yeast. Beat the whites into a foam.

Combine the flour with the yeast mixture, egg whites, butter, and salt. Knead the dough. This dough should be kneaded for a long time, at least 15 minutes.

Line the baking pan with parchment paper. Divide the dough into three parts. Roll one part into a ball and place it in the center of the pan. Roll the remaining two parts into long ropes, setting aside a small piece of dough for decoration. Braid the ropes. Place the smaller braid around the ball, slightly moistened with water.

Then place the second braid on top. Use the reserved dough to make decorations as desired – flowers, leaves, small figures – and arrange them on the surface of the kulich. Brush the surface with egg yolk and bake in the oven at 180°C for 75 minutes. While still hot, brush the kulich with sugar syrup.
