
Souvlaki
Description
The dish is prepared without unnecessary complications. Souvlaki is a very tasty Greek national dish that I tried in a remote village on the island of Crete. In the mountains, we ended up in a local taverna with no hotels or tourists around. The taverna owner personally took our order, although he didn't speak English at all. I couldn't get the souvlaki recipe from that taverna owner, but I managed to find out from a Greek woman. She happily shared the secret of this dish with me :) The souvlaki recipe is quite simple. The key to the entire dish lies in the marinade. The meat should be marinated for at least 4 hours, but it's better to leave it in the marinade overnight. That way, it turns out very tender and delicious. Souvlaki can be made with almost any meat—chicken, pork, or turkey. Serve souvlaki with pita bread, vegetables, and the traditional Greek white sauce tzatziki. Good luck with your cooking! The dish is now ready to be served.

We peel the garlic and finely chop it.

We squeeze all the juice from the lemon. It's better to do this using a juicer.

Pour 4 tablespoons of oil into the lemon juice, add thyme, oregano, salt, pepper, and garlic (very finely chopped or pressed).

Cut the meat into cubes approximately 2 centimeters in size.

Put the meat into a bag and pour the marinade in.

Mix everything well, cover, and refrigerate to let it steep.

When the meat is ready to cook, soak the wooden skewers in water (for 15-30 minutes), then thread the meat onto them.

A grill pan or barbecue is best for preparing souvlaki, but you can also use a regular non-stick frying pan.
