
Shrimp Sushi Sandwich
Description
Besides shrimp, for the filling you can use fried chicken breast or thigh fillet, crab sticks, or a filling made from canned tuna, lemon juice, and mayonnaise. Serve the appetizer.

Step 1

Prepare the ingredients for making "Onigirazu" or sushi sandwiches. This amount of ingredients yields 8 pieces. If you are using frozen pre-cooked shrimp, simply bring them to a boil in salted water and cook for 2–3 minutes, then peel off the shells. Don't forget to remove the intestinal vein along the back of large shrimp.

To prepare sushi rice, bring water to a boil in a saucepan or pot, add salt, and add the rice in a water-to-rice ratio of 1.5:1. Use short-grain sushi rice. Let the water come back to a boil, reduce the heat to the lowest setting, and cover the pot with a lid. Cook the rice for 15 minutes. When the time is up, turn off the heat and let the rice finish cooking.

Gently fluff the cooked rice with a bamboo skewer or fork, being careful not to break the grains. Mix the sugar into the rice vinegar and dress the still-warm rice. Mix well.

Prepare the vegetables. Remove the core and seeds from a fresh cucumber and cut it into matchsticks. Cut the green onion into segments the same size as the cucumber matchsticks. Wash and dry the lettuce leaves. Cut the avocado in half, remove the pit and peel, and slice it into thin slices.

Place a nori sheet on the work surface, shiny side down. It is very convenient to assemble the filling using a square serving mold.

Divide the cooked rice into four portions, approximately 115–120 grams each. Place half of one portion of rice (57–60 grams) into the mold. Spread 1 tbsp of teriyaki sauce on top of the rice and distribute it evenly over the entire surface of the rice layer. You can also spread a thin layer of cream cheese on top. You can use the sauce and cheese together or separately.

On the cream cheese layer, place 2 lettuce leaves, cucumber matchsticks, and green onion feathers.

Place 4 large prepared shrimp per serving on the vegetables, along with avocado slices.

Place the remaining half of the rice (57-60 grams) on top and press it down firmly with a spoon so the filling compacts.

Fold the nori corners like an envelope so the filling is completely enclosed inside.

Wrap each portion in plastic wrap. The nori sheets will become moist and more elastic, and the sandwich will be easy to cut in half.
