
Dried Flounder
Description
A tasty snack for any gathering. This recipe is about how to make dried flounder at home. It turns out delicious and very inexpensive. When salting the flounder, along with salt you can also use other seasonings: paprika, black pepper. If you don't have a balcony and can't hang the fish outside the window, lay it out on several layers of newspaper and send it to dry on the windowsill. In this case, turn the fish over to the other side every other day. Dried flounder prepared at home will be a great accompaniment to beer in good company.

1. Prepare the flounder for drying: wash it well, gut it, thoroughly clean out all the innards, and remove the scales. Remove the head (it’s best to do this with a curved cut) and all the gills so the fish does not spoil.

2. Place the flounder in a deep bucket, basin, or bowl. Rub it well with salt inside and out. Let the fish cure in salt for about 10 hours at room temperature (approximately 20°C).

3. Next, remove the fish from the basin and rinse it very thoroughly with water, inside and out. Pat dry with a paper towel or cloth so no water drips from it.

4. Prepare a place for drying the fish; in warm weather you can air-dry it on the balcony and outside the window. Flounder can also be dried indoors, since it is sea fish and does not produce an unpleasant odor. You can use a board with nails to dry the fish, or simply string the fish one after another on thick thread. In warm weather, dry the flounder for about 3–5 days.

5. Once the fish has dried, remove it, wrap it in newspaper, and store it in the refrigerator. Home drying of flounder is complete; the fish is ready to eat.
