
Super fluffy croissants
Description
Why are these croissants so fluffy? It's because you need not just yeast dough, but sweet shortcrust yeast dough. Thanks to its characteristic crumbly texture, they simply melt in your mouth! As a filling, you can use jam, chocolate pieces, condensed milk, or thick preserves. Shape the pastries to your liking—bake them either large or small. If desired, decorate the finished pastries with melted chocolate, powdered sugar, or fruit syrup. The baked goods are ready. Serve and enjoy!

1. Mix warm water with dry yeast and sugar, and let it sit for 10 minutes. In a separate bowl, lightly beat the eggs with sugar, salt, and vanilla sugar using a whisk.

2. Rub cold butter into crumbs with sifted flour. Mix the egg mixture with the yeast mixture and add to the shortbread crumbs. Knead a soft dough that should not stick to your hands.

3. Knead the dough slightly, gather it into a ball, and wrap it in plastic wrap. Let the dough rest on the counter for 1 hour; it should not rise. Divide the dough into two parts, and roll each part into a circle about 3 mm thick.

4. Cut the circle into 16 or fewer triangles, depending on the desired size of the future rolls. Place the filling along the wider edge and roll up towards the narrow end. Brush the rolls with beaten egg or simply coat them in sugar.

5. Place the croissants on a parchment-lined baking sheet and bake in a preheated oven at 170-180 degrees for 20 minutes.
