
Turkey meatball soup
Description
A delicious and hearty dish ready in half an hour? Why not, especially when we're talking about Italian cuisine! They truly understand the art of healthy, simple, and tasty food. I never quite understood why soup is served at weddings, but I really liked this wedding soup. So, I'm happy to share it with you.

1. First, prepare the meatballs - pass the fillet through a meat grinder, then mix with breadcrumbs, grated cheese, chopped parsley, onion and garlic, as well as egg and spices. I used dried vegetables and herbs, but you can use fresh ones as well. Mix until uniform.

2. Shape the meatballs, and at the same time place a pot with broth on the stove. When it comes to a boil, add the meatballs and chopped endive. Reduce the heat.

3. Simmer over low heat until the endive becomes soft and the meatballs turn light in color. Now add the orzo and spices, cook for another 5 minutes over low heat, then turn off the heat and let the dish sit covered for another 5 minutes.

4. Done! Serve once the soup has rested a bit and the orzo has plumped up. Delicious!
