
Agar agar souffle
Description
The dish is prepared without unnecessary complications. Today, agar-agar is widely used in cooking. It's no surprise, as it's an excellent natural substitute for gelatin. Agar-agar is considered a healthy product, obtained by extracting brown and red seaweed from the Black Sea. Desserts made with agar set much faster than those made with gelatin. Today, I suggest preparing a delicate and airy agar-based souffle. The finished dessert can be served immediately.

1. First, beat the egg whites into a fluffy foam, then prepare purée from the currants and strain it through a sieve. Meanwhile, soak the agar in water, place the container over heat, add sugar, and simmer for about 2 minutes.

2. Add the currant puree and the boiled agar with sugar to the egg white. Beat again with a mixer. Attention! Agar sets quickly, so pour it into the egg whites in a thin stream and beat immediately.

3. Place the resulting mixture into a mold (I used a regular plastic mold), spread it evenly, let it cool, and then refrigerate for at least 3 hours.

4. When the soufflé has set, remove the mold and dip it into hot water for a minute. Then carefully remove the agar soufflé, slice it, and serve.
