
Cottage cheese souffle
Description
Perfectly complements tea and coffee. To check if the pastry is ready, serve at the table.

Step 1

Wash the apple and peel it, removing the core and seeds. Grate it on a coarse grater. To avoid having to add extra sugar to the soufflé, use a sweet variety of apple. Add the mashed cottage cheese to the apple and beat in a raw chicken egg. Mix everything thoroughly.

The mixture should be quite runny. Spoon it into silicone baking molds used for making cupcakes and muffins.

Place the ramekins with soufflé in the microwave and set it to the highest power. Bake the soufflé for five minutes. If it hasn't set sufficiently, add another two minutes.

For serving, take a large plate and turn the soufflé out of the mold onto it, so that it ends up upside down in the center of the plate. Sprinkle the finished soufflé with cinnamon if desired or with powdered sugar, and serve.
