
Shrimp and Crab Stick Soufflé
Description
Perfect for the table and with drinks. Depending on the occasion you are preparing this appetizer for, you can improvise with the ingredients. If it is a festive buffet, you can make the appetizer entirely with shrimp. In my recipe, I will describe a more affordable option, using crab sticks as the main bulk. Coarsely chopped shrimp in the soufflé give the dish an elegant, bright seafood flavor. The dish can be prepared in individual molds, served in a ceramic dish or a ramekin. The soufflé can be used as a spread on toast or to fill tartlets and vol-au-vents for a buffet table. The appetizer is ready. Serve immediately.

Prepare the ingredients for making the soufflé. Boil the eggs and separate the whites from the yolks. The yolks will not be needed in this recipe. Use cream of any fat content. If using frozen cooked shrimp, simply bring them to a boil in salted water and cook for 1–2 minutes, then remove from the heat.

After boiling the shrimp, rinse them with cold water to preserve a soft, tender texture. Remove the heads, shells, and intestinal vein from the boiled shrimp. Cut the shrimp into pieces of any size.

Soak the gelatin in warm water according to the instructions on the package and allow it time to bloom.

Heat the cream in the microwave or on the stove. Place the crab sticks (meat) and egg whites in the blender bowl. Pour in half of the cream and blend the ingredients.

Add salt and ground pepper to taste to the creamy crab mixture. Add the bloomed gelatin to the remaining warm cream and stir until dissolved. Combine with the crab mixture.

Add the chopped shrimp and mix the mixture.

Prepare the molds for the soufflé. These can be small silicone portion molds or ceramic ramekins. Divide the prepared mixture among the molds. Cover the tops with plastic wrap to prevent drying out and refrigerate to set.

Once the soufflé has stabilized, it can be transferred from the mold to a serving dish or board.
