
Zucchini soufflé in a multicooker
Description
This recipe won’t take much time. It’s tender and airy, with a pleasant cream cheese flavor. It’s a great way to start the day! This breakfast will delight not only adults but also children—the zucchini in the finished dish is hardly noticeable at all. I strongly recommend making this breakfast. The whole charm of making it in a multicooker is that it’s no fuss and the dish definitely won’t burn. Serve cooled or slightly warm.

Prepare all the necessary ingredients for making the soufflé.

Peel young zucchini if necessary; if needed, remove the seeds too.

Grate the zucchini on a grater, salt, mix well, and let stand for 10 minutes so they release their juices.

Meanwhile, grate the cheese on a fine grater and put it into a bowl. Separate the eggs into yolks and whites. Set the whites aside and add the yolks to the cheese. Stir in the semolina.

Pour in the cream and stir the mixture.

By this time the zucchini should have released enough liquid; squeeze them well.

Beat the reserved egg whites until stiff peaks form.

Add the squeezed courgettes to the cheese‑and‑cream mixture and stir. Season to taste.

Fold the beaten egg whites into the zucchini mixture in 2–3 additions.

Gently mix the mixture so as not to lose its airiness.

Grease the multicooker inner pot with vegetable oil. Spoon in the zucchini mixture and smooth it evenly. Select the multicooker’s “Bake” program and set it to 30 minutes. Cook until the chime/beep signals completion, without opening the lid. After the signal, leave the dish inside the multicooker, still closed, for another 10–15 minutes.

Carefully run along the inside walls of the multicooker bowl, loosening the soufflé from the sides. Transfer to a serving dish. At first the soufflé will be tall and airy, but it will settle slightly afterward—that is normal.
