
Zucchini and turkey souffle with sauce

One of my close friends doesn't eat meat. So, before her visit, I spent a long time thinking about what could surprise and impress her. I found this recipe for zucchini soufflé with turkey in sauce! In her portion, I didn't add meat, but even in the "vegetarian" version, the soufflé was delicious! So I'm sharing the recipe with you too.

1. Beat the room-temperature butter with flour until a paste-like consistency forms. Add milk and egg yolks. Separately, finely chop the turkey and zucchini, then gently mix into the batter.

2. Beat egg whites into a thick foam, then gently fold into the batter. Add spices to taste.

3. Bake for 20 minutes at 180 degrees. It might take longer. The soufflé should rise, but not be raw in the center. Check with a toothpick.

4. Let's make the sauce. To do this, fry the remaining flour, then pour in the juice. As soon as it boils and thickens, reduce the heat, add soy sauce, tomato paste, and jam. Add spices to taste.
