Blue cheese soufflé

Description

It pairs perfectly with tea and coffee. I’m not very keen on dessert soufflés, but savoury ones are another matter—I make them regularly. One of my signature dishes is a blue cheese soufflé: a classic French dish made to a strict recipe that goes back more than a century. The soufflé turns out magnificent—as they say, like in the finest houses in Paris :) You can serve it with tea or coffee.

    Grease the soufflé moulds with butter, sprinkle with grated Parmesan, and put them in the freezer. The quantities given will yield 4 soufflés, 9 cm in diameter.

    Take a small saucepan and melt the butter in it over medium heat. Add the flour to the melted butter and cook, whisking vigorously, for 1 minute.

    Then add the milk to the saucepan and, whisking constantly, cook for another 2–3 minutes.

    Remove the finished sauce from the heat and immediately stir in one egg yolk. Mix quickly.

    Stir the cheese into the saucepan and mix quickly again until the cheese has melted. Set the smooth mixture aside for 15 minutes and let it cool.

    Meanwhile, beat the egg whites with a pinch of salt until fairly stiff peaks form.

    Gently fold the egg white mixture into the cooled cheese mixture.

    Place the small baking dishes inside the large one. Fill the large dish with water so that it comes halfway up the sides of the small dishes. Spoon our soufflé mixture into the small dishes.

    Bake for 30–35 minutes at 180°C. During this time the soufflé will rise and form a crust, while inside it will stay tender and moist.

    Serve immediately with, for example, a vegetable salad. :)
