
Horse sujuk
Description
A tasty appetizer for any gathering. Sujuk is a cured dried sausage. Many peoples make it, so who owns the original recipe is unknown. Nevertheless, in Kazakhstan and Kyrgyzstan this sausage is made from horse meat. If you have horse meat and wish to make this tasty sausage, this recipe describes it in detail. Serve with herbs and sauce.

Run the meat and fat through a meat grinder (or chop it very finely with a knife). You can grind half the meat through the coarse plate and half through the fine one.

Grind all the spices and mix them with salt and sugar.

Add spices to the meat.

Add the wine, mix, and refrigerate for about 12 hours or overnight. Instead of wine, you can add 1–1½ tablespoons of cognac or brandy.

Fill the pork casings with the rested meat mixture.

And shape the sausages to whatever length you like.

Hang the sausages by one end to dry in a cool, well-ventilated place.

And once a day, for 4–5 days, roll them with a rolling pin to give them a flat shape. The sujuk dries and cures for 3 weeks to a month.
