Wash the fish, and if necessary, gut it. Trim the fins and clean the fish.

Pour the oil into a small container. Squeeze the juice from half a lemon into it. Mix well and rub the resulting "sauce" all over the fish. Next, combine salt with peppers and herbs. Rub this mixture onto the fish as well. Place several sprigs of thyme and slices of thinly cut lemon into the fish's belly cavity. Let it marinate for about 10 minutes.

Meanwhile, preheat the oven to 200 degrees. Take a baking dish, line it with foil, and lightly grease it with oil. Place the remaining lemon (also sliced into rounds) in the dish, and put the marinated fish on top. Cover the dish with foil and bake for about 15 minutes.

After 15 minutes, take out the fish dish. There should be quite a lot of juice released, which we use to baste the fish. Bake for another 7 minutes (you don't need to cover with foil).

Serve the ready fish at the table! You can also drizzle it with freshly squeezed lemon juice.
