
Pike-perch in the oven with sour cream sauce
Description
One of the easiest ways to cook fish is baking. This method helps the fish retain its beneficial properties and doesn't require standing at the stove for long. Pike-perch pairs well with various sauces—such as tomato or creamy—so everyone can choose their favorite. I serve the cooked fish with potatoes (boiled, baked, or mashed) or vegetables (fresh or roasted).

1. I clean the fish from scales, cut off its head, tail, and fins; it takes a bit of effort since the fish is small.

2. Cut open the belly, remove all the innards, and thoroughly rinse the fish under running water.

3. I salt the fish inside and out, place it in a bowl, and put it in the refrigerator for 2-3 hours.

4. I pour the flour into a bowl and coat the fish in it. I heat a pan with sunflower oil well, then place the fish in the pan.

5. I fry the pike-perch on both sides until a golden crust forms.

6. I mix sour cream with crushed cheese, adding spices (basil and marjoram) to taste.

7. Line the baking sheet with parchment paper, grease it with butter, and place the fish on it.

8. Pour the fish with the prepared sour cream sauce and place in a preheated oven at 200 degrees for 15-20 minutes.

9. I take the cooked pike-perch out of the oven and cut it into pieces.
