Step 1
Remove the innards from the pike-perch, cut off the fins and gills. Rinse the fish. Season the inside and outside of the fish with salt and pepper.

Line a baking sheet with foil. Spray it with oil. Arrange the sliced carrots and onions around the perimeter.

Place the pike-perch on top. Scatter thyme and peppercorns over it. Then place pieces of butter on the fish.

Bake the pike-perch in a hot oven at 180 degrees for 50 minutes. Serve with a side dish.
