Pike-perch in sour cream sauce
Description
The recipe won't take much time. You'll definitely enjoy this simple pike-perch in sour cream sauce! The dish turns out hearty and tender. I think the combination of lemon and fish won't seem unusual to you, but not everyone would think of mixing cottage cheese with sour cream (for a fish sauce). And that's a pity: the sauce acquires a thick, pleasant consistency and interesting flavor notes. Serve hot.

Step 1

1. Cut the fish into pieces, carefully remove bones and scales. Cut into portions, thoroughly rinse each piece. Pat the fish dry slightly, then rub with chopped fresh herbs, salt, and coriander. Sprinkle with lemon juice and let marinate for half an hour to an hour in the refrigerator.

Step 2

2. The fish can be baked or fried. I prefer to fry it in flour in hot oil. To do this, I heat the oil in a frying pan. Then I dip the fish in flour and place it in the frying pan. Fry until cooked through.

Step 3

3. Place the cooked pieces of fish on paper towels to absorb excess moisture. Meanwhile, prepare the sauce. In a blender, mix the cottage cheese with sour cream, lemon juice, and lemon zest. Then add chopped herbs and garlic. Finally, add oregano and salt to taste.
