
Grilled pike-perch
Description
The secret to well-cooked pike-perch lies in drying it. Before baking, pat the fish dry with a paper towel. This will result in a beautiful, golden crust. Simply delicious!

We gut and thoroughly wash the fish. Be sure to remove the scales. Dry with a paper towel and make three cuts on each side of the fish.

Mix the chopped onion and lemon juice with butter and salt. Marinate the pike-perch in this mixture, generously coating both the inside cavity and the outer surface. Leave it in the refrigerator for 60 minutes.

Beat softened butter in a blender together with lemon juice and zest. Add salt. Mix in chopped green onion to taste. Place the mixture onto plastic wrap, then put it into the freezer for now.

Remove the ingredients from the marinade. Pat the fish dry with a paper towel. Coat it with vegetable oil and place it on the grill.
