
Aspic
Description
Kualekyas is an Udmurt aspic usually made only from offal, without adding meat cuts from the animal, yet still very tasty. It is no harder to prepare than regular aspic or kholodets. I will share the recipe with you. It can be served warm or chilled.

Step 1
Scrub and wash all the ingredients very thoroughly. Cut the leg into smaller pieces. In total, you should end up with about 1 kg of product.

Place everything in a pot, add salt to taste, and cover with water in a ratio of 1 kg of ingredients to 1.5 L of water. Set over low heat and simmer for 6 hours. Skim off the foam from time to time. If you like, you can add parsley root, carrot, and onion.

To check if the meat is done, try separating it from the bone. If it comes off easily, it's done.

Remove everything from the broth, let it cool slightly, then separate the meat from the leg bones. Cut the meat, tongue, and ears into small pieces.

Return to the broth and bring to a boil over low heat.

Remove the pot from the heat and add the garlic, pressed through a garlic press or finely chopped.

Mix well, pour into molds, and place in a cool spot. Serve the aspic sliced; you can add mustard or horseradish.
