
Pork Trotter Aspic
Description
Thoroughly wash the trotters, or better yet soak them in warm water for about an hour, and scrape them with a knife. Remove all dirt and hairs. Put them in a pot and cover with cold water without salt. Cook the aspic, salt it, arrange the meat, and pour the broth over it. Put it in the refrigerator overnight to set. Good luck.

Prepare the vegetables, spices, and pork for aspic. Wash the pork feet and pork knuckle very thoroughly, scrape them with a knife, and if needed remove any remaining bristles. If the feet are very dirty, soak them for about an hour in warm water, then they are easier to clean.

Place the legs, pork knuckle, vegetables, and spices into a convenient deep pot.

Do not salt! Pour in cold water so that it covers the meat by only 2–3 fingers, and bring to a boil. Cover with a lid and simmer at a low boil for 5–6 hours.

After 6 hours, remove the vegetables and spices and discard them. Salt the aspic to taste.

Remove the meat and bones from the broth. Let it cool slightly so you can handle it. Separate the meat from the bones.

Take small plates for aspic. Distribute the meat and fattier pieces evenly.

Pour in the broth and leave to cool in a cool place for 6–8 hours, or better yet overnight.

The aspic is ready! Serve the aspic with mustard or horseradish.
