Canned green beans

Description

A simple way to preserve for later. Before eating, underripe asparagus bean pods must be heat-treated. Fresh pods contain a substance that can cause poisoning in large amounts. For winter storage, blanch the beans in boiling water. Then pack them tightly into jars and cover with marinade. Store in a cool, dark place.

    1. Rinse the green beans, trim the ends, and cut them in half if the pods are long.

    2. Pour boiling water over the beans for 5 minutes, drain in a colander, and rinse with cold water.

    3. Pack the pods tightly into sterilized half-liter jars. In a saucepan, combine boiling water and salt; simmer for a couple of minutes, remove from the heat, and add the vinegar. Pour the warm brine over the pods in the jars.

    4. Cover the jars with clean lids and sterilize them for 8–10 minutes. Seal the lids, turn the jars upside down, wrap them in something warm until completely cooled, and store in a cool place.
