
Fish Stroganina
Description
The recipe won't take much time. Stroganina is the simplest appetizer made from red fish. The freezer will do everything for you, and all you'll need to do is slice and season the dish. Use a sharp knife, as frozen fillet is very difficult to cut into thin pieces.

Step 1

Prepare the listed ingredients. Before cooking, freeze the salmon fillet at minus 18–20 degrees in the freezer. It is best to keep it there for at least 2–3 days. It is believed that during this time at such a low temperature, all harmful organisms in the fish die, if any are present.

Leave a piece of frozen salmon at room temperature for literally 5 minutes, then use a sharp knife to slice the fillet into thin petals.

Place them in a semicircle on a plate; they can overlap. Season with pepper and salt. Coarse sea salt works best.

Spritz the slices with vinegar and vegetable oil. You can substitute lemon juice for the vinegar, but lemons are too much of a luxury for people in the North, whereas vinegar is always on hand! Leave the stroganina for literally 2 minutes to soak in.

Then serve the dish at the table with a shot of vodka or another alcoholic drink.
