
Strasbourg plum pie
Description
The baking is simple and quick. I made the Alsatian plum pie for the first time, and I have to say, I was absolutely delighted! The result was a delicate cottage cheese soufflé combined with plums, which were fully infused with the aroma of cinnamon. It's simply wonderful! I found this easy recipe for Alsatian plum pie in an old cookbook (without pictures or step-by-step photos), but I still decided to give it a try. I didn't regret it—it turned out very tasty, even if not perfect. A magnificent pie. Highly recommended :)

Step 1

Cut the margarine into small pieces with a knife. Then mix the margarine with flour and sugar until it forms fine crumbs. Add the egg and knead the dough. Place the prepared dough in the refrigerator for about 30 minutes, then roll it out and line a baking form, shaping the edges. Place plums tightly on top in a single layer. Make a small cut in each plum, remove the pit, "stuff" it with a teaspoon of sugar and a small amount of cinnamon. Arrange them cut-side up.

Separate the egg whites from the yolks. Then, in a suitable container, blend the cottage cheese with sour cream and sugar. Add starch and egg yolks. Beat the egg whites separately (!!!), then gently incorporate them into the cheese mixture. Mix everything together and pour over the plums.

Sprinkle with sugar and cinnamon on top.

Place the pie in a preheated oven at 170 degrees and bake for about an hour. If your oven runs hot, you might need to lower the temperature by a few dozen degrees to prevent the pie from burning. Once done, remove the pie from the oven and let it cool.

The pie should cool completely, after which we serve it at the table.
