
Haystacks
Description
To prepare haystacks, make the filling, grate the potatoes, and prepare the stuffing. Then shape the haystacks and bake in the oven. The dish looks very original and is served with a fresh salad, porridge, or potatoes. Good luck with cooking!

Step 1

Why haystacks? Have you ever been in the Carpathians in early autumn? When the grass is still green, and there are small, neat haystacks of hay everywhere. Today, we'll capture this beauty in our cooking. And for that, we need minced meat, which we'll also prepare ourselves. Take a slice of bread—I used a roll—and soak it in water or milk.

Next, chop the onion.

Add the egg, salt, spices, onion, and don't forget to finely chop the garlic or press it through a garlic press.

Add the soaked bread to everything else.

Mix everything! Voilà! The filling is ready!

Now let's move on to the tasty filling! We need to make a small cut in the apricot, and if necessary, also in the prune, then insert half a walnut into both the apricot and the prune. If you don't have a suitable mold, you can make a small cone out of parchment paper. I have a plastic ice cream lid. I greased the center of it with vegetable oil so that the meat would come out of the mold more easily later. Place a small amount of minced meat at the top of the mold. Then insert the apricot with the nut.

Fill with the stuffing and place prunes with nuts. Compact the stuffing during the process to avoid empty spaces.

Fill the entire bottom evenly with the minced meat. Shake slightly and remove the mold from the stack.

Grate the potatoes and cheese on a coarse grater and mix.

Each patty should not just be coated in the cheesy-potato mixture, but gently pressed to adhere it to the meat. Place the patties onto a greased baking sheet. Bake the meat patties for 35–45 minutes at 180–190 degrees Celsius, until golden brown. When serving, garnish with lettuce leaves or any other greens.
