
Sturgeon baked in foil
Description
The recipe won't take much time. This is a classic method of baking sterlet in foil, without mayonnaise or other additives. It will surely appeal to those who enjoy the authentic flavor of fish. Baked whole, it can be served as a main dish at a festive table. If desired, you can additionally garnish it before serving. Serve hot.

1. First, prepare the fish. Wash the sterlet, clean it from entrails, scales, and fins. Rinse the belly cavity thoroughly and, if desired, remove the head.

2. Peel the onion and slice it thinly into half-rings. The recipe for sterlet baked in foil can be adjusted to suit personal taste preferences, for example, by replacing the onion with green onion scallions.

3. Fish dishes rarely go without lemon. It needs to be thoroughly washed, slightly dried, and sliced into thin pieces.

4. Season the cleaned sterlet with salt and pepper to taste, add your favorite fish spices and dried herbs. Sprinkle with olive oil.

5. Line a baking dish or tray with a sheet of foil. Add about half of the lemon and onion, arranging them as desired. For extra flavor, you can also add a couple of fresh herb sprigs.

6. Place part of the onion, lemon, and herbs inside the cavity, and arrange the remaining on top.

7. Tightly seal the foil by folding the edges, then place the dish in a preheated oven. The sterlet baked in foil at home will be ready in 30–45 minutes, depending on the fish size. Serve it whole or cut into portioned pieces. This recipe is also excellent for grilling sterlet on a barbecue.
