Boil water in a saucepan. Meanwhile, we need to gut the sterlet and rinse it under cold water. When the water in the saucepan comes to a boil, pour it over the fish from all sides; this will help us remove the scales. Now scrape off the small scales with a knife and remove the larger ones by hand.
