Description
If you love fish soup, sterlet is perfect for it, but fried sterlet will delight the taste buds of any gourmet. Fry the fish in butter with a small addition of vegetable oil (optional), preferably using a pan with a thick bottom. After that, simmer the sterlet for about 20 minutes in a cauldron, adding a little water. So, here's how to do it:

1. Before frying, the sterlet needs to be gutted. It is very important to remove the air bladder. It's best to do this with the dull side of the knife. Pull it out carefully so as not to tear it.

2. Then trim the fins and tail, thoroughly rinse the fish once again, and cut it into portion-sized pieces. Add salt and spices to taste, rubbing them into the fish thoroughly.

3. You can sprinkle with lemon juice and let it sit for 30 minutes. This will help the fish marinate better.

4. It is better to fry sterlet in butter with a small amount of vegetable oil. Fry over low heat on all sides.

5. Since this fish is fatty, there's no need to add much oil. You can fry sterlet with its tubercles (the bony growths on the back of sturgeon fish). Sear on all sides until golden brown.
